Crushed avocado on sourdough toast



Yield 4 toasts

It just could not be easier. Simply source good quality sourdough bread and ripe avocado - you are good to go! 

I have added a tablespoon of chopped coriander (cilantro) and a few chopped tomatoes to this mix. It gives crushed avocado some vibrancy and extra freshness.  


For two people (2 toasts each):


Remove avocado flesh and simply crush it with your fork. Chop tomatoes and coriander, add it to crushed avocado. In the meantime, toast your sourdough slices (make sure you don't burn it as it won't be very healthy for you).

Simply place your avocado mixture on top of your toast and enjoy!

P.S. If you've made a bit more of avocado mix, you can preserve it in the fridge for a few days and use it for you burrito later on as something similar to a guacamole.
