When I say about easy vegan recipes, I have this recipe of vegan chocolate in mind too. Having no major sweet tooth, it is sometimes a bit challenging to discuss vegan sweets. Yet there are special occasions, visits to friends who have kids and so on. My favourite treat is homemade vegan chocolate, because, let’s face it – you know what’s going in and there is no nasty stuff here, promise!
My easy vegan chocolate recipe is without added sugar and contains ingredients you can count on one hand. Intrigued?
Vegan chocolate ingredients
To make use a few treats I have used 50 g cocoa butter, 15 g date syrup, 15 g cacao powder, a tablespoon of chopped dried cranberries and a pinch of salt.
Technically speaking, you are completely OK with just first three ingredients. I have added a bit of salt for some contrast and a few cranberries for that fruity je-ne-sais-quoi.
Vegan chocolate: how to make it
The method cannot be easier too – you simply melt shopped cacao butter in a bain marie, add syrup and then cacao powder. Mix well until there are no lumps. Now you have a full authority to be creative. In my current recipe I have added a small pinch of sea salt (in my opinion, it contrasts well with sweet date syrup) and a tablespoon of chopped dried cranberries (they are sweet and sour at the same time). You are basically triggering many taste receptors. And it feels awesome.
You can pour that hot mixture to a few moulds or simply spread onto a baking tray lined with a parchment. Keep in the fridge or freezer for over 20 minutes. You can break the latter into the shards or squares.
More vegan sweets
To complement my platter of vegan chocolate, I have prepared a small bonus – mini vegan energy squares. Forgive me, my fellow vegan bloggers, but vegan balls are just a bit off putting for me to think about!
I simply blend dates, cashews, desiccated coconut with some coconut oil to form a coarse paste. It is then going to be shaped into squares and placed in a fridge to set. You can then cut them into pieces and cover with a small layer of desiccated coconut for an extra crunch. You have got a second treat ready.
You know what, even my non-sweet tooth is very happy to get a few pieces of such a treat.
You cannot even imagine what kind of furore it triggered when sampled by 4-5 year old kids! They simply loved it.
What’s best is that there is no added sugar whatsoever!
